It seems unanimous! Most folks that I spoke to after the Potluck this past weekend indicated that Flo's "coconut bombs" were "the bomb!" YUM, YUM! I'll seek Flo out and get her recipe and post it here!
Update: Spoke to Flo and she said they are called Coconut Joys! The ratio is: 3-4 cups of shredded coconut, 2 cups confectionary sugar, 1 cup melted butter, 1/2 tsp. or so of vanilla extract. Combine and drop onto a cookie sheet lined with wax paper. Place in fridge. Melt chocolate, place chocolate in a bag and pipe the chocolate onto the cold cookies. Store in the fridge.
